BBQ Chicken Sweet Potato Bowls

prep time: 30 minutes | makes 4 servings


4-6 cup shredded rotisserie chicken

1 cup bbq sauce

4 sweet potatoes, cut into 1 inch dice

2 tbsp olive oil

14oz Cole slaw mix

1/2 cup avocado oil mayo

2 tbsp apple cider vinegar

2 tbsp coconut aminos

salt

Pepper

Pickles


preheat oven to 425 degrees. Layer sweet potatoes onto a baking sheet in a single layer. Drizzle with olive oil and season with salt and pepper. Roast for 25 minutes or until tender.

Meanwhile mix the cole slaw with the mayo, vinegar, coconut aminos, 1/2 tsp salt and pepper.

Mix the chicken with bbq sauce, reheating in a saucepan over medium heat.

to assemble the bowls: Take a portion of sweet potatoes and top with bbq chicken, slaw and pickles!
