Niçoise Toasts

prep Time: 15 minutes | Cook Time: 12 minutes | Makes 4 servings


4 eggs, hardboiled, peeled

3/4 cup cottage Cheese

5oz can Albacore Tuna, drained

2 tbsp olive oil

1/4 cup chopped fresh parsley

1 tbsp capers

2 tbsp chopped fresh dill

1 cup chopped cherry tomatoes

1/4 cup chopped, pitted kalamata olives

juice of a lemon, divided

salt & Pepper

Bread for Toasting


In a medium bowl mash eggs, 1 tbsp olive oil, juice of half a lemon and cottage cheese with a fork until a coarse paste forms. Add half the capers and season with salt and pepper. Stir in chopped dill.

In another bowl stir together tomatoes, olives, remaining lemon juice, 1 tbsp olive oil, salt, pepper, parsley and remaining capers. Gently mix in tuna being careful to not break up the clumps too much.

Toast your bread well. Spread egg salad on top and top evenly with tomato/Tuna mixture.
