Paleo Pancakes With Strawberry sauce

prep time: 5 minutes | Cook Time: 8 minutes | makes 8 3 inch pancakes


Pancake Batter

1 1/2 cups almond flour

2 tbsp coconut Flour

2 scoops wellmade restorative microbiome

4 eggs

1 ripe banana

1 tsp vanilla

1/2 tsp baking powder

1/4 tsp Himalayan sea salt

1 tsp cinnamon

1 tbsp almond milk

coconut oil for frying

strawberry Sauce

2 cups frozen strawberries (or fresh)

1-2 tbsp honey

Juice of half a lemon

Pinch of Salt


to prepare the sauce:

Add all sauce ingredients into a medium sauce pan and bring to a simmer over medium heat. Lower heat and continue to simmer until strawberries start to soften and juices thicken slightly.

To make the batter:

Smash the banana in a large bowl. whisk in eggs until combined. Add remaining batter ingredients, whisking until smooth.

Heat a large frying pan over medium heat. Add 2 tsp of coconut oil to the pan and drop batter by 1/4 cupfuls into the hot pan (smaller pancakes cook more evenly in the center). I fit 4 in my pan at once. Cook about 3 minutes before flipping. Cook for an additional 3-4 minutes until edges look fully cooked and centers are firm. set pancakes aside and continue with remaining batter, adding more coconut oil to the pan before ladling batter.

Enjoy pancakes with Strawberry sauce or real maple syrup. plain Pancakes freeze well.
