Pina Colada Baked Oats
prep time: 5 minutes | bake time: 30 minutes | makes 6 generous servings
5 cups old-fashioned oats
1 scoop Wellmade Restorative Fortify
½ cup honey
¼ cup melted coconut oil
4 eggs
1 can coconut milk
1 cup almond milk (or additional coconut milk)
1 cup chopped frozen pineapple
½ cup unsweetened toasted coconut
¾ tsp salt
1 tsp baking powder
In a large bowl combine all ingredients and stir to combine. Spread into a greased 9 x 13-inch pan.
Bake at 350 degrees for about 30 minutes. Cool for 10 minutes before enjoying. Top with Greek yogurt for additional protein if desired or store in the refrigerator and reheat later in the week.
