Apple Cinnamon muffins (Gluten-Free)

Prep TIme: 5 minutes | Bake TIme: 30 minutes | makes 10 muffins


2 cups almond flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 scoop Wellmade Restorative Fortify

3 eggs

3 tbsp coconut oil, melted and cooled

1/2 cup maple syrup

1 medium apple, finely diced

1/2 cup walnuts


Preheat oven to 325 Degrees. Grease a muffin tin with oil.

in a large mixing bowl combine the almond flour, baking powder, baking soda, salt and cinnamon. Stir well. Mix in the eggs, oil and maple syrup. Stir in the diced apple. Fill each muffin cup almost all the way full (My last batch only made 10 muffins not a full dozen). Top with chopped walnuts and thinly sliced apples for garnish if desired.

Bake for 28-32 minutes and cool in pan for 15 minutes. Store in an airtight container in the fridge for 3 days.
