Rosemary Roasted Apples & Yogurt

prep time: 5 minutes | Bake time: 10 minutes | Makes 2 servings


2 apples cut into 1/2 thich slices - honey crisp are my fave

1 tbsp olive or avocado oil

1 tbsp honey or maple syrup

pinch sea salt

1 tsp freshly choppeed rosemary

juice of a lemon wedge (not the whole lemon)

2 cups full-fat, Greek Yogurt

Favorite granola - Purely Elizabeth is mine


Preheat oven to 425 degrees. Place sliced apples on a parchment lined baking sheet and toss with oil, honey, salt, lemon juice and rosemary. Place in hot oven and roast for 10-12 minutes, until apples are softening but not losing their shape. let apple mixture cool and divide between 2 servings of yogurt and granola.
