Tater Tot Breakfast Casserole
Prep time: 20 minutes | Bake time: 35 minutes | makes 8 servings
1 bag Alexia Brand Tater Tots
1 lb. ground pork
1 tbsp chopped Fresh Thyme, rosemary and sage (the Poltry blend - comes together) you need 1 tbsp total, not a tbsp of each
1 tbsp maple syrup
1 tsp salt
1/4 tsp pepper
1/4 tsp red chili flake
1 onion, diced
1 pepper (any color you like), diced
12 eggs
1/2 cup non-dairy milk or water (to thin eggs)
preheat the oven to 425 degrees. Place tator tots in a single layer in a 9x13 inch pan and bake for about 20 minutes until golden. Remove from oven and set aside Decrease oven temp to 350 degrees.
brown the ground pork in a saute pan, breaking it into pieces with a wooden spoon. season with salt and pepper and add fresh herbs, chili flake and maple syrup. Brown the meat until cooked through. add the peppers and onions and cook for about 3 more minutes to soften the vegetables. Drain any liquid that has accumulated.
In a medium bowl whisk together the eggs and milk. Season with additional salt and pepper.
Distribute the pork sausage mixture over the browned tator tots and pour over the egg mixture. Bake for 35 minutes (or until set in the center). allow dish to rest for 10 minutes before serving or let cool and store in the refigerator. Reheat individual servings all week as part of your meal prep!
