Banana Walnut baked oats

prep time: 10 minutes | bake time: 30 minutes | Makes 6 servings


3 cups non-dairy milk

4 cups old-fashioned oats

4 eggs

4-5 ripe bananas (use 5 if they are small)

1 tbsp baking powder

1/4 tsp salt

2 tsp cinnamon

2 scoops wellmade restorative balance or microbiome (or 1 scoop fortify)

1/3 cup maple syrup

1/2 cup chopped walnuts

1/2 cup chocolate chips (I use Enjoy Life brand)


preheat oven to 350 degrees.

In a large bowl mash the bananas well (you can use a hand mixer for this as well). Add in the eggs and milk. Stir in the oats, baking powder, salt, Balance, cinnamon and maple syrup. Mix well. Mix in the chocolate chips and walnuts.

Pour the mixture into a greased 9x13 pan and bake for 30-35 minutes. Let cool slightly before serving. Can be made ahead and reheated for a great meal prep option.
