Blistered Green Bean & Radish Salad
prep time: 15 minutes | cook time: 5 minutes | makes 8 side dish servings
1 1/2 lbs green beans, trimmed
1 cup sliced radishes
2 ripe avocados, sliced
1/2 cup fresh mint
1/4 cup fresh dill
2 tbsp lemon juice
zest of a lemon
1/4 cup olive oil
2 tbsp greek yogurt
4 cups arugula
2 oz crumbled feta
1 tbsp Everything But The Bagel Seasoning or Dukka Seasoning

Heat a large skillet over high heat. Add 1 tbsp olive oil and the green beans. Season with Salt. Stir-Fry, stirring occassionally until beans are starting to char in spots. This will take about 5 minutes. Transfer beans to another dish to cool.
To make the dressing, combine the olive oil, lemon juice, lemon zest, 1/2 tsp salt, tbsp chopped dill and 1 tbsp chopped mint whisking until combined.
To assemble the salad combine the cooled green beans, radishes, arugula, remaining mint and dill, feta and dressing, top with sliced avocado and sprinkle with the seasoning. Serve immediately.
