prep time: 5 minutes | Cook time: 20 minutes | makes 4 servings

1.5lbs salmon filets (wild caught is preferred)

2 tbsp dijon mustard

2 tbsp maple syrup

sea salt

Fresh chopped thyme or rosemary (optional)

preheat the oven to 375 degrees. Place the salmon on a parchment lined baking sheet, flesh side up.

In a small bowl combine the mustard, maple syrup, and herbs. Whisk until combined. Pour over the salmon using a pastry brush to coat.

Bake salmon for about 18 minutes or until cooked through - do not overcook or fish becomes tough.

Place under the broiler for 2 minutes to caramelize the sauce a bit. Enjoy!
