Brussels Sprouts & Bacon Frittata

prep time: 10 minutes | cook time: 20 minutes | makes 4 servings


8 eggs

8 oz bacon, diced

2 shallots, thinly sliced

1/2 lb Brussels Sprouts (about 6 large) ends cut off and thinly sliced

1 tbsp olive oil

2oz - 4 oz goat cheese (depending on how much you like)

salt

pepper

fresh dill


Preheat oven to 350 degrees.

heat a 9 inch oven proof skillet over medium heat. add bacon and cook stirring occassionally until golden brown and crispy. Removed bacon to a paper towel lined plate to drain. Discard all the bacon grease expect one tablespoon. add the shallots and brussels sprouts to the hot skillet and season with salt and pepper. saute the veggies for 4-5 minutes untils starting to soften. Meanwhile beat the eggs in a medium bowl with a whisk until well mixed.

Add the bacon back to the pan and mix into the veggies. pour the egg mixture over the veggies/bacon and lower the heat. crumble the goat cheese over the top. Put the skillet into the oven for 15 minutes or until egg mixture is set.

Let stand at room temp 5 minutes before slicing. Top with chopped fresh dill and enjoy!
