Peanut Butter Caramel APple Quinoa Porridge

peanut butter caramel
1/4 cup peanut butter (can sub almond or cashew butter)
3 dates
1/4 cup maple syrup
2 tbsp melted coconut oil
pinch salt
dash vanilla
Quinoa Apple Porridge
2 cups cooked quinoa
1 - 1 1/2 cups almond milk
1 tsp cinnamon
1 apple, cut into slices
1 tsp coconut oil
pinch salt
1 tbsp honey or maple syrup
To make the Peanut Butter Caramel combine all the ingredients into a food processor and process until smooth. Add a bit of warm water to thin if necessary. Store in the refrigerator if not using right away and let sit at room temperature for 30 minutes before using (if you have the patience!)
Melt 1 tsp of coconut oil in a small sauté pan over medium heat. Add the apple slices, cooking about 2 minutes on each side to soften. Add the quinoa, 1 cup almond milk, cinnamon, honey and salt. Cook over medium heat for 2-3 minutes. Mix in the Fortify Blend, stirring well. Add more almond milk necessary.
Divide quinoa between 2 bowls (safe half for the next day!). Drizzle each bowl with about 1 tbsp of peanut butter caramel and enjoy!
