Carrot Cake Oatmeal Bake

prep time: 10 minutes | bake time: 35 minutes | Makes 6 servings


4 cup old-fashioned Oats

2 scoops Wellmade Restorative Fortify

1 cup grated carrot

1/2 cup shredded unsweetened coconut

1/2 cup raisins

1/2 cup chopped nuts (I like walnuts in this)

1 tbsp cinnamon

1/2 tsp nutmeg

1/2 tsp ground ginger

2 tsp baking powder

1/2 tsp salt

1/4 cup coconut oil, melted

1/2 cup maple syrup

3 1/2 cups almond milk

3 eggs


Preheat oven to 350 degrees. Grease a 9 x 13 inch pan.

In a large bowl combine all the ingredients and mix well. pour into the prepared pan and bake for 30-35 minutes. Top with Glaze or serve with Greek yogurt.

optional glaze: melt 1/4 cup coconut butter (not coconut oil), 1 tbsp maple syrup and 2 tbsp coconut or almond milk together in a small pan, whisking to combine. Pour over oats.
