Garden Goodness One-Pot Pasta

Prep Time: 10 minutes | Cook time: 40 minutes | Serves 6


2 lbs ground beef (grass-fed preferably)

12 oz gluten Free Rotini or Penne (Jovial Brand is my go to)

1 large onion, chopped

1 - 2 green peppers, chopped

4 roma tomatoes, chopped or 1 can diced tomatoes (undrained)

4 cloves garlic, chopped

2 tsp salt

1/2 tsp pepper

1 tsp garlic powder

1 tsp oregano

2 cups tomato sauce or tomato juice

2 cups chicken or beef stock

1 tsp tobasco sauce

1/4 tsp red chili flakes (optional)


in a large, deep saute pan or 5 qt dutch oven brown the ground beef, adding salt and pepper, over mediuim-high heat. break meat up with a spoon until crumbly. Mix in the onion, garlic, peppers and tomatoes. Add in the garlic powder and oregano. Saute for about 5 minutes or until veggies start to soften.

Stir in the pasta, tomato juice, and stock. Bring the liquid to a simmer and cover. Allow the pasta to cook in the liquid until al dente, stirring occasionally (recover between stirs). add in tobasco and chili flakes if desired.

Allow to sit for 5 minutes before serving. The noodles should be tender but not mushy and most the liquid should be absorbed.
