Peach Pie Cottage Cheese

prep time: 5 minute | makes 2 servings


2 cups cottage cheese

2 ripe peaches, diced

1/2 tsbp of butter

1 tbsp coconut sugar, brown sugar or maple syrup

1/4 tsp cinnamon

tiny pinch salt

1/4 cup granola


In a small saucepan melt the better over medium heat. Add the diced peaches, sugar, cinnamon and salt. Stir occassionally, about 5 minutes or until peaches are slightly softened and caramelized. Allow mixture to cool (you can pop it in the freezer for about 10 minutes to speed up the process).

Grab 2 16oz glass containers and Place 1 cup of cottage cheese in each. Divide the peach mixture between each and top with granola. These will keep 3-4 days in the refrigerator.
