Fortified GF Banana Bread

prep time: 10 minutes | Bake time: 75 minutes | makes 10 slices


3 ripe bananas

3 eggs

2 cups almond flour

2 scoops wellmade restorative fortify

2 tbsp melted coconut oil or olive oil

1/4 cup maple syrup

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1 tsp vanilla

1/2 cup chocolate chips (I use Enjoy Life Dark Chocolate Chips which are dairy free)


Preheat oven to 350 degrees.

In a large bowl mash the bananas with an electric mixer. Add remaining ingredients, beating until well-combined (about 45 seconds).

Line a loaf pan with parchment paper. Lightly grease the parchment and pour the batter into the lined pan. Bake bread for about 45 minutes. Loosely cover with foil to keep the top from over-browning.

Bake another 30 minutes. Cool in pan on wire rack for 20 minutes. Remove the bread from the pan and allow to continue to cool on rack before slicing (or until it’s mostly cool :)

Store in an airtight container for up to 3 days. Storing the in the refrigerator will buy your another day or 2.
