Green Chili Salsa Chicken Soup

prep time: 10 minutes cook time: 30 minutes makes 4 servings


2 lbs chicken Breasts

2 tbsp olive oil

2 jalapenos, chopped

1 cup finely chopped red onion

4 cups chicken stock

2 - 15 oz cans canellini beans, drained & rinsed

1 16oz jar salsa verde

2 limes

Salt

Cilantro & Tortilla Chips for serving


place raw chicken breasts in a medium sized saucepan and cover with water. Bring to a simmer and cover. Cook chicken for 30 minutes. Remove to a cutting board to cool slightly. When cool enough to handle shred or chop chicken.

Meanwhile in a large pot heat olive oil over medium heat. Stir in jalapenos and onion. Season with salt and pepper. Cook for about 5 minutes. Add beans, broth, salsa and one cup water. turn up the heat to bring back to a simmer. Add chicken to the soup and simmer for about 10 minutes. Add the juice of 2 limes, chopped fresh cilantro and season with additional salt and pepper.

Serve with more cilantro and crumbled tortilla chips.
