Carrot Cake Overnight Oats

prep time: 10 minutes | makes 4 - 5 servings


3 cups old-fashioned oats

2 scoops wellmade restorative fortify

1/3 cup maple syrup

2 tsp cinnamon

1/2 tsp nutmeg

1/2 cup chopped walnuts

1/4 cup shredded coconut (unsweetened)

1/4 cup raisins

1 cup shredded carrots

pinch sea salt

4 cups non-dairy milk - plus more for topping


Combine all ingredients into a large bowl and stir until well combined. Portion oat mixture into individual containers (mason jars or pyrex) and top with additional milk so oats are completely submerged with about a 1/2 inch of milk on top. The oats will absorb the excess milk overnight.

Store the oats in the refrigerator for 4 hours up to 5 days. enjoy chilled or at room temperature.
