Italian Chopped Salad

Prep Time: 15 minutes | Cook TIme: 0 minutes | Makes 4-5 servings


2 large hearts of Romaine lettuce, chopped

1 small head Radicchio, chopped

1 pint cherry tomatoes, chopped

1 can chickpeas, drained and rinsed

1/2 cup kalamata olives, sliced in half

1 can artichoke hearts, drained and chopped

1 can hearts of palm, drained and chopped

3 oz applegate farms organic salami, chopped

thinly sliced red onion, optional

diced provolone, optional

Dressing

1/4 cup balasamic vinegar

1/2 cup Olive oil

2 tsp Dijon mustard

1 tsp sea salt

pepper


Evenly divide all the salad ingredients into 4-5 meal prep containers (I used 4 cup pyrex containers).

to make the dressing add the dressing ingredients to a food processor or blender and blend untl emulsified and creamy. Store in the fridge until ready to use.

Dress salad right before serving and enjoy!
