Christmas Snickerdoodles (GF)

prep time:10 minutes | Bake Time: 10 minutes | Makes 2 dozen small cookies


3 cups almond flour

2 tsp cinnamon

1/4 tsp nutmeg

1/4 cup coconut sugar (regular sugar can be used)

1/2 tsp salt

1/2 tsp baking soda

1/2 cup melted coconut oil

1/2 cup maple syrup

decorative sprinkles


preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper.

In a large bowl, whisk together the coconut oil, and maple syrup. add the almond flour, salt, baking soda, and 1/4 tsp of cinnamon, mixing well.

In a small bowl mix the coconut sugar, remaining cinnamon and nutmeg.

Roll dough into 1 inch balls and roll into cinnamon/sugar mixture. Place on the bakings sheet topping with additional sprinkles and gently press down to flatten to 1/4 inch thick. Bake for 10 minutes or until golden brown on the edge. Store sealed at room temperature for up to 5 days.
