Lemon Chia Seed Baked Oats

prep time: 5 minutes | bake time: 45 minutes | makes 6 generous servings


5 cups old-fashioned oats

4 eggs

3 cups almond milk

1/2 cup maple syrup

1 cup full-fat yogurt (I used Silk Almond Milk Yogurt)

Juice and zest of 2 lemons - don’t skimp

1 tsp vanilla

2 scoops WELLMADE RESTORATIVE Fortify

2 tbsp chia seeds (or poppyseeds)

1/2 tsp salt

2 tsp baking powder


preheat oven to 350 degrees. Grease a 9x13 inch pan.

whisk eggs with the milk until well blended in a large mixing bowl. Stir in remaining ingredients.

Pour oat mixture into the prepared pan and bake about 45 minutes or until set.

Allow to cool 10 minutes before serving or cool completely and store in the refrigerator and reheat throughout the week!

To take this to the next level top with a glaze of powdered sugar and lemon juice or 2 tbsp melted coconut butter, 2 tsp maple syrup and 1 tbsp lemon juice.

The yogurt, chia seeds, eggs and fortify add about 52 grams of protein to this dish.
