Plantain Crusted Chicken Fingers

1 1/2 pounds chicken breast tenders

2 scoops of Wellmade Restorative fortify

2 eggs, beaten

2 - 5oz bags Terra Plantain chips

1/2 tsp salt

olive oil


Preheat your oven to 425 degrees. Line a baking sheet with parchment paper or foil. If using foil, lightly grease.

POur the plantain chips into a food processor and process until chips resemble coarse crumbs. Pour plantain crumbs into a shalllow dish and add salt.

Put the wellmade restorative fortify into another shallow dish. Have the beaten eggs in a bowl.

You will first coat the chicken in the fortify, then dip into the egg letting the excess run off and finally coating in the plantain mixture. Place on the lined baking pan. Repeat with all the chicken.

Lightly drizzle each piece of chicken with olive oil and bake for 25-30 minutes (we like our chicken well-done).

Serve with favorite dipping sauce or drizzle with a mixture of Franks Red hot and Honey for a sweet and spicy surprise!
