Pumpkin Turkey Chili
Prep time: 10 minutes | Cook time: 30 minutes | Makes 8 servings
1 1/2 lbs ground turkey
1 onion, diced
2 green peppers, diced
4 cloves garlic, chopped
28 oz can roasted diced tomatoes
15oz can pumpkin puree
2 cups chicken stock
15 oz can black beans, drained and rinsed
2 tbsp chili powder
2 tsp cumin
1 tsp cinnamon
2 tsp salt
pepper
2 scoops wellmade restorative balance
lime, cilantro, avocado for garnish
In a large pot cook the ground turkey over medium heat, breaking meat up as it cooks. Add the onion, peppers and garlic and season with salt and pepper. Cook for about 3 minutes until the vegetables begin to soften. Stir in the chili powder, cumin, cinnamon and balance. Add the diced tomatoes, pumpkin, stock and black beans. Season with salt and pepper. Cook uncovered for about 30 minutes. Add the juice of 1 - 2 limes before serving.
Top with cilantro and avocado and enjoy!
