Shrimp Tacos With Spicy Peach Plum Salsa
prep time: 15 minutes | cook Time: 10 minutes | Makes 4 servings
2 lbs shrimp, peeled & deveined (I used 24-30 count)
Guacamole
Shredded Red cabbage
Corn tortillas, toasted & kept warm
peach plum salsa:
2 ripe peached, diced
2 ripe plums, diced
1 jalapeno or serrano, finely diced
1/2 cup red onion, finely diced
1/2 cup chopped cilantro
juice of a lime
sea salt & pepper to taste
1 tbsp olive oil
In a medium bowl combine all the salsa ingredients, stir and set aside.
In a large skillet, heat 1 tbsp of olive oil over med-high heat. add the shrimp to the hot pan, season with salt and pepper. Cook for 6-8 minutes or until shrimp are cooked through (do not overcook, they will get tough).
Serve shrimp in the toasted tortillas with salsa, cabbage, guacamole and extra lime.
