jalapeno pineapple pork roast
prep time: 10 minutes | cook time: 4 hours | serves: 4 with leftovers
3lb. Pork Loin Roast
1 onion, chopped
3 cloves garlic, chopped
1 jalapeno, sliced
2 cups fresh pineapple cut in chunks
½ cup cup coconut aminos or ¼ cup soy sauce
Brown sugar or coconut sugar (optional)
Fresh cilantro
Place pork loin roast in a slow cooker and season well with salt and pepper.
Add the onion, garlic, jalapeno, pineapple, ½ cup coconut aminos. Sprinkle with 2 tbsp. sugar (if using, recommended if cooking with the soy sauce).
Cook on high for 4 hours (or low for 6).
Top with fresh cilantro to serve. This roast will be fork tender but I like to serve it in thick slices, not shredded.
