Mocha Chip Muffins
prep time: 10 minutes | bake time: 25 minutes | makes 10-12
2 1/2 cups almond flour
3/4 tsp Himalayan Sea Salt
3/4 tsp baking soda
1 tbsp Instant Espresso Powder
2 scoops wellmade restorative balance
1/2 tsp cinnamon
1/4 cup coconut oil, melted
1/2 cup maple syrup
2 eggs, beaten
1 tbsp vanilla extract
1 cup chocolate chips (I use Enjoy Life for dairy free option)
Preheat oven to 350 degrees. Grease a muffin time or line with muffin papers.
Combine all ingredients into a large bowl and mix well! Divide batter amoung cups, filling almost all the way full. You should have enough for at least 10 muffins.
bake for 20-25 minutes until golden and firm. Let muffins cool for at least 15 minutes before digging in.
