Sweet Potato Salmon Patties
prep time: 10 minutes | cook time: 8 minutes | Serves: 4
1 large sweet potato, cooked and mashed
3 - 5oz cans boneless, skinless canned salmon (I used Safe Catch Brand)
1/2 cup almond meal or bread crumbs
1 scoop wellmade restorative fortify
1 egg
1 tsp salt
1 tbsp lemon juice
1 cup plain, unsweetened yogurt
2 tbsp fresh dill, chopped
few dashes tabasco or other hot sauce
olive oil for pan-frying
In a medium bowl combine the sweet potato, salmon, FORTify, almond meal, egg, salt and lemon juice. Mix until ingredients are well combined. Form into 5-6 patties.
Heat about 2 tbsp olive oil over medium heat in a large skillet. Carefully add patties to the hot pan, but do not overcrowd (may have to brown in 2 batches). Cook about 3 minutes before flipping. Cook an additional 3-4 minutes on the other side.
While the patties are browning, mix the yogurt, dill, tabasco and pinch of salt and pepper together.
Serve salmon patties with lemon wedges and yogurt sauce.
